Spring is often a time for cleansing. Why not start out your Spring with a diet rich in liver support with Dandelions. The young leaves are great in salads, the roasted roots make a great alternative to coffee in the morning, and the flowers make great breakfast fritters! Dandelions contain vitamin A, B-1, B-2, B-5, B-6, B-12, C, E, P, and D, as well as biotin, iron, calcium, potassium, phosphorus, magnesium, and zinc.
My favorite Dandelion recipe is:
Mix 1 cup of wholewheat flour with 2 tsp of baking powder, and a pinch of salt. Beat in 1 egg, add 1/2 cup of milk and 2 tablespoons of olive oil. Stir in 1 cup of the yellow parts of the dandelion flowers. Cook like pancakes. Serves hot with honey or butter.
